- 8 oz fettuccine or penne
- 2 cups fresh cremini or button mushrooms, sliced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 cup walnuts, toasted and chopped
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine or penne and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden brown and moisture has evaporated, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Lower the heat slightly, pour in heavy cream, and stir in grated Parmesan cheese. Simmer gently until well combined.
- Add cooked pasta directly into the skillet along with toasted walnuts. Toss everything together until each strand is coated in the creamy sauce.
- Season with salt and pepper to taste before plating. Garnish with additional Parmesan if desired. Serve immediately.
