Description

Indulge in a deliciously creamy mushroom pasta dish, complete with crunchy walnuts, that’s ready in just 30 minutes. Perfect for busy weeknights!

Ingredients

Scale
  • 8 oz fettuccine or penne
  • 2 cups fresh cremini or button mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup walnuts, toasted and chopped
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine or penne and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden brown and moisture has evaporated, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Lower the heat slightly, pour in heavy cream, and stir in grated Parmesan cheese. Simmer gently until well combined.
  5. Add cooked pasta directly into the skillet along with toasted walnuts. Toss everything together until each strand is coated in the creamy sauce.
  6. Season with salt and pepper to taste before plating. Garnish with additional Parmesan if desired. Serve immediately.
