- 4 cups fresh spinach
- 1 cup kale (stems removed)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 large eggs
- 1/2 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tsp cumin powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent (about five minutes). Add minced garlic and stir until fragrant.
- Stir in the fresh spinach and kale. Sauté until wilted (about three minutes). Season with cumin powder, salt, and pepper.
- In a bowl, crack the eggs one by one and whisk gently until combined. Fold in crumbled feta cheese and the sautéed greens mixture.
- Grease a muffin tin with nonstick spray or oil. Pour equal portions of the egg mixture into each muffin cup, filling them about three-quarters full.
- Place the muffin tin in the preheated oven and bake for around 15-20 minutes or until eggs are set but still moist.
- Allow to cool slightly before carefully removing each Green Shakshuka Cup from the tin. Serve with crusty bread or fresh avocado slices for dipping.
