Instructions

- In a medium saucepan, bring water to a gentle simmer over medium heat. Crack each egg into a small bowl and gently slide them into the simmering water. Cook for about 3 minutes until the whites are firm but yolks remain runny.
- While eggs are poaching, heat olive oil in a small pan over medium heat. Add smoked paprika and cook for about 30 seconds until fragrant.
- Remove poached eggs using a slotted spoon and place them atop the seasoned yogurt. Drizzle with paprika-infused olive oil.
