Description

This Miso-Glazed Cod with Sautéed Winter Greens is a delightful winter dish that combines tender cod fillets with a rich umami glaze and vibrant, nutritious greens.


Ingredients

  • 4 cod fillets (6 oz each)
  • 3 tbsp white or red miso paste
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 4 cups winter greens (kale, Swiss chard, or collard greens), chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a small bowl, whisk together miso paste, soy sauce, honey, and rice vinegar until smooth.
  3. Place cod fillets in the baking dish and pour half of the miso glaze over them. Reserve the remaining glaze.
  4. Roast in the preheated oven for about 12-15 minutes until the cod flakes easily with a fork.
  5. While the cod roasts, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about one minute until fragrant.
  6. Toss in winter greens and cook until wilted (about three minutes).
  7. Transfer cod and sautéed greens to plates. Drizzle remaining miso glaze over both before serving.
