- 4 tbsp unsalted butter, softened
- 3 tbsp white miso paste
- 2 cloves garlic, minced
- 1 lb bok choy, trimmed and halved
- 3 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
Instructions
- For the Miso Butter: In a small bowl, mix softened butter, miso paste, and minced garlic until smooth.
- For the Cod: Heat olive oil in a non-stick skillet over medium-high heat.
- Season cod fillets with salt and pepper.
- Place cod skin-side down (if applicable) in the skillet and sear for about 4 minutes until golden brown.
- Carefully flip the fillets using a spatula, adding dollops of miso butter on top.
- Cook for an additional 3-4 minutes until cod is cooked through.
- For the Bok Choy: In another pan or alongside your cod, add remaining oil if needed.
- Toss in bok choy and stir-fry for about 2 minutes until slightly wilted but still crisp.
- To Serve: Arrange cod and bok choy on plates. Drizzle any remaining miso butter over everything before serving.
