  • 3 tbsp white miso paste
  • 2 cloves garlic, minced
  • 1 lb bok choy, trimmed and halved
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar

Instructions

  1. For the Miso Butter: In a small bowl, mix softened butter, miso paste, and minced garlic until smooth.
  2. For the Cod: Heat olive oil in a non-stick skillet over medium-high heat.
  3. Season cod fillets with salt and pepper.
  4. Place cod skin-side down (if applicable) in the skillet and sear for about 4 minutes until golden brown.
  5. Carefully flip the fillets using a spatula, adding dollops of miso butter on top.
  6. Cook for an additional 3-4 minutes until cod is cooked through.
  7. For the Bok Choy: In another pan or alongside your cod, add remaining oil if needed.
  8. Toss in bok choy and stir-fry for about 2 minutes until slightly wilted but still crisp.
