Instructions

  2. In another bowl, combine buttermilk, egg, vegetable oil, red food coloring, and vanilla extract. Whisk until smooth.
  3. Pour the wet ingredients into the dry mix and gently fold them together until just combined; lumps are okay for fluffiness.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.
  5. Scoop about half a cup of batter onto the heated pan for each pancake. Cook until bubbles form (about two minutes), then flip and cook until golden brown on both sides (another minute).
