Instructions

- In another bowl, combine buttermilk, egg, vegetable oil, red food coloring, and vanilla extract. Whisk until smooth.
- Pour the wet ingredients into the dry mix and gently fold them together until just combined; lumps are okay for fluffiness.
- Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.
- Scoop about half a cup of batter onto the heated pan for each pancake. Cook until bubbles form (about two minutes), then flip and cook until golden brown on both sides (another minute).
- Transfer pancakes to plates and drizzle with cream cheese frosting or maple syrup.
