- 1 cup walnuts (toasted)

- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the pears into wedges, removing the core. Arrange on one side of the prepared baking sheet, drizzle lightly with olive oil, and sprinkle with salt. Roast for about 15-20 minutes until tender and caramelized.
- While the pears roast, toast the walnuts in a dry skillet over medium heat until golden brown, monitoring closely to avoid burning.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
- In a large bowl, combine mixed greens, roasted pears, toasted walnuts, and crumbled Gorgonzola cheese. Drizzle with vinaigrette just before serving.
