Description

Indulge in the delightful blend of sweet roasted pears, creamy Gorgonzola, and crunchy walnuts in this vibrant salad, perfect for impressing guests or treating yourself.

Ingredients

Scale
  • 2 ripe pears (Bosc or Anjou)
  • 4 oz Gorgonzola cheese
  • 1 cup walnuts (toasted)
  • 4 cups mixed greens (arugula and spinach)
  • 1/3 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the pears into wedges, removing the core. Arrange on one side of the prepared baking sheet, drizzle lightly with olive oil, and sprinkle with salt. Roast for about 15-20 minutes until tender and caramelized.
  3. While the pears roast, toast the walnuts in a dry skillet over medium heat until golden brown, monitoring closely to avoid burning.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  5. In a large bowl, combine mixed greens, roasted pears, toasted walnuts, and crumbled Gorgonzola cheese. Drizzle with vinaigrette just before serving.
  6. Serve immediately on plates or as a family-style platter.
