Description

Indulge in the warmth of Winter Spiced Linzer Cookies, featuring buttery, crumbly goodness with a spiced jam filling that brings nostalgia and joy to every bite.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar (for dusting)
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 3/4 cup raspberry or apricot jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, cinnamon, and ginger until well combined.
  3. In another bowl, beat together the butter and granulated sugar until fluffy (about 3 minutes). Add the egg yolk and vanilla extract; mix until incorporated.
  4. Gradually add the dry mixture to the butter-sugar mixture until just combined; avoid overmixing.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to create shapes, cutting holes in half for a classic Linzer look.
  6. Place cookies on prepared baking sheets and bake for 12-15 minutes or until lightly golden around the edges. Allow them to cool completely.
  7. Once cooled, spread jam on half of the cookies and top with another cookie. Dust with powdered sugar before serving.
