Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together the flour, cinnamon, and ginger until well combined.
- In another bowl, beat together the butter and granulated sugar until fluffy (about 3 minutes). Add the egg yolk and vanilla extract; mix until incorporated.
- Gradually add the dry mixture to the butter-sugar mixture until just combined; avoid overmixing.
- Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to create shapes, cutting holes in half for a classic Linzer look.
- Place cookies on prepared baking sheets and bake for 12-15 minutes or until lightly golden around the edges. Allow them to cool completely.
- Once cooled, spread jam on half of the cookies and top with another cookie. Dust with powdered sugar before serving.
