- 1 can (5 oz) high-quality canned tuna (in olive oil or water)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/3 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Drain the canned tuna thoroughly and flake it into a large mixing bowl.
- Chop the cherry tomatoes in half and dice the cucumber into bite-sized pieces. Thinly slice the red onion.
- Add the chopped vegetables, olives, and crumbled feta cheese to the bowl with tuna. Mix gently to combine.
- In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper until emulsified.
- Pour the dressing over the tuna and veggie mixture. Toss gently until everything is evenly coated.
- Chill the salad in the refrigerator for about 30 minutes to allow flavors to meld together before serving.
