Ingredients

  • 2 lbs beef tenderloin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar (aged)
  • 1/4 cup low-sodium chicken broth
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin generously with salt and pepper.
  3. In an ovenproof skillet over medium-high heat, add olive oil. Once hot, sear the tenderloin on all sides until browned.
  4. Remove the beef from the skillet and set aside.
  5. In the same skillet, add minced garlic and chopped rosemary; sauté until fragrant.
  6. Pour in balsamic vinegar and scrape up any brown bits from the bottom of the pan.
  7. Once reduced by half, stir in chicken broth and let simmer gently.
  8. Return the tenderloin to the skillet and place everything in the preheated oven.
  9. Roast until an instant-read thermometer registers about 130°F (54°C) for medium-rare (about 20-25 minutes).
  10. Remove from oven, cover with foil, and let rest for 10 minutes before slicing.
  11. Transfer to plates and drizzle with sauce before serving.
