  • 2 tbsp fresh thyme, chopped
  • 6 cloves garlic, minced
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup prepared horseradish (freshly grated preferred)
  • 1 cup sour cream
  • 2 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, salt, pepper, and olive oil until it forms a paste.
  3. Rub the herb mixture generously over the prime rib roast to ensure even coverage.
  4. Place the seasoned roast on a rack in a roasting pan and bake for 20 minutes.
  5. Reduce the oven temperature to 325°F (160°C) and continue roasting until it reaches an internal temperature of about 130°F (54°C) for medium-rare (approximately 15-20 minutes per pound).
  6. Remove from the oven and cover loosely with aluminum foil. Let it rest for at least 20 minutes.
  7. While the roast rests, mix prepared horseradish with sour cream and Dijon mustard in a bowl until well blended.
