- 1 cup sour cream
- 2 tbsp Dijon mustard
Instructions
- Preheat your oven to 450°F (230°C).
- In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, salt, pepper, and olive oil until it forms a paste.
- Rub the herb mixture generously over the prime rib roast to ensure even coverage.
- Place the seasoned roast on a rack in a roasting pan and bake for 20 minutes.
- Reduce the oven temperature to 325°F (160°C) and continue roasting until it reaches an internal temperature of about 130°F (54°C) for medium-rare (approximately 15-20 minutes per pound).
- Remove from the oven and cover loosely with aluminum foil. Let it rest for at least 20 minutes.
- While the roast rests, mix prepared horseradish with sour cream and Dijon mustard in a bowl until well blended.
- Adjust seasoning if necessary. Serve slices of prime rib drizzled with horseradish sauce for an unforgettable dining experience!
